Purple Sage, or Salvia officinalis purpurascens is a purple-leaved version of Garden sage or Common sage, and is a small perennial evergreen plant with woody stems. Purple Sage grows to approximately 60-70cm tall and wide, and does not flower as readily as its cousin, common sage, in cooler climates. If it does flower, lavender/violet/blue flowers will appear in late spring or summer. Like Common Sage it is native to the Mediterranean region, though it has naturalized in many places throughout the world, Sage has a long history of medicinal and culinary use, and in modern times as an ornamental garden plant.
Preferring light, well-drained soil and full sun, Sage plants will often flourish all year, and should have leaves to harvest for much of the year.
Whilst Purple Sage is now mainly used as a culinary herb and an ornamental, it can be made into a tea by steeping a few sage leaves in hot water is today still used as a remedy for coughs and sore throats. As a culinary herb, Sage has a slight peppery taste, and is used to flavour fatty meats in the form of stuffing and sauces, and also adds flavour to soft cheeses and pickles. Also try frying the leaves in some hot oil until crispy and sprinkle over a pork chop or even a fried egg on toast with a sprinkling of chilli flakes - delicious!
